In a large mixing bowl, beat the butter on high for 30 seconds, with an electric mixer.

Beat in the sugar, egg, vanilla, baking soda, cream of tartar and salt. Beat until thoroughly combined.

Mix in the flour. If you use a wooden spoon in conjunction with the electric mixer it will make the dough come together quickly and easily.

Cover the bowl with plastic wrap and chill the dough for 1 hour.

Preheat oven to 375°.
Combine the sugar and cinnamon in a small bowl and set aside.

Remove the dough from the refrigerator and shape the dough into 1 inch balls.

Roll the dough balls in the cinnamon/sugar mixture.

Place balls onto an ungreased cookie sheet.

Bake at 375° for 10-11 minutes, or until edges are golden brown.

Cool cookies on cooling rack.
