  • 3/4 c
    butter or margarine,softene
  • 1/2 c
  • 1/2 c
    packed brown sugar
  • 1
  • 2 Tbsp
  • 1 tsp
    vanilla extract
  • 1 1/4 c
    all purpose flour
  • 1 1/4 c
    graham cracker crumbs (about 20 squares)
  • 1/2 tsp
    baking soda
  • 1/4 tsp
  • 1/8 tsp
    ground cinnamon
  • 2 c
    milk chocolate chips (12oz.) i use hershey's
  • ·
    24 to 28 large marshmallows

How to Make S'more Sandwich Cookies


  1. In a mixing bowl, cream butter and sugars. Beat in egg, milk and vanilla. Combine the flour, graham cracker crumbs, baking soda, salt and cinnamon; slowly add to the creamed mixture. Stir in the chocolate chips.
  2. Drop 1 Tbsp. of dough 2 inches apart onto parchment lined cookie sheet. Bake at 375 for 8-10 minutes or until golden brown. Remove to wire racks to cool.
  3. Place four cookies bottom side up on a microwave safe plate top each cookie with a marshmallow. Microwave, uncovered, on high for 16-20 seconds or until marshmallows begin to puff. (do not overcook)
  4. Top each with another cookie, repeat. 2 dozen
