skillet date cookies
I got this recipe from my younger sister. She calls them Angel Cookies. The filling will be very hot so use caution when rolling. I love them because they are sweet, chewy and crispy.

Ingredients
- 8-10 ounces dates, chopped
- 1 cup sugar
- 1/2 cup butter
- 1 teaspoon vanilla extract
- 2 cups rice krispies
- 1/2 cup pecans, chopped
- 1 cup coconut, flaked
- NOTE: MAY DECREASE RICE KRISPIES BY 1/4 -1/2 CUP TO BE ABLE TO FORM BALLS BETTER WITHOUT THEM GETTING TOO DRY. ALSO SOME PEOPLE USE AN EGG IN THEIR RECIPE, THIS ONE DOES NOT CALL FOR AN EGG BUT YOU MAY ADD ONE IF YOU LIKE.
How To Make skillet date cookies

Step 1Melt butter in large heavy skillet. Add chopped dates and sugar. Cook over low heat, stirring frequently for about 4-5 minutes, until thick and bubbly.

Step 2Remove from heat; add vanilla, rice cereal and pecans.

Step 3When just cool enough to handle, form into small balls and roll in coconut.
