shortbread sugar cookies

I found this awesome cookie recipe in our local paper years ago when I was in nursing school. I made these cookies and shared them with the nursing staff who hosted our clinicals. They all raved about them...but then the recipe disappeared. I came up with a similar version and found it works pretty well. Hope you like them too.

Ingredients
- 1 cup butter
- 1/2 cup confectioners' sugar
- 1 1/4 cups sifted all purpose flour
- 3/4 cup cornstarch
- 1/2 teaspoon salt
- 1 teaspoon vanilla
How To Make shortbread sugar cookies

Step 1Mix softened butter and confectioners' sugar until light and fluffy. Add other ingredients and mix until well blended. Refrigerate dough until chilled. Roll out dough and use cookie cut-out shapes. Place on parchment paper lined cookie sheet...(It's necessary b/c these cookies can be fragile when trying to lift off cookie sheet w/o parchment paper.)Bake at 350 degrees for about 12 to 15 min.

Step 2These cookies are really good with a glaze of powdered sugar, a little butter, lemon or lime juice and hot water. I like to put the glaze on fresh out of the oven. (These cookies freeze really well.)
