shortbread sugar cookies

I found this awesome cookie recipe in our local paper years ago when I was in nursing school. I made these cookies and shared them with the nursing staff who hosted our clinicals. They all raved about them...but then the recipe disappeared. I came up with a similar version and found it works pretty well. Hope you like them too.

Ingredients

  • 1 cup butter
  • 1/2 cup confectioners' sugar
  • 1 1/4 cups sifted all purpose flour
  • 3/4 cup cornstarch
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla

How To Make shortbread sugar cookies

  • Step 1
    Mix softened butter and confectioners' sugar until light and fluffy. Add other ingredients and mix until well blended. Refrigerate dough until chilled. Roll out dough and use cookie cut-out shapes. Place on parchment paper lined cookie sheet...(It's necessary b/c these cookies can be fragile when trying to lift off cookie sheet w/o parchment paper.)Bake at 350 degrees for about 12 to 15 min.

    These cookies are really good with a glaze of powdered sugar, a little butter, lemon or lime juice and hot water. I like to put the glaze on fresh out of the oven. (These cookies freeze really well.)
