My friend, Rod, made the best shortbread cookies I had ever tasted. He is a chef. He shared his recipe with me! Yeah!

Ingredients
- 3/4 pound butter
- 1 cup confectioners sugar
- 3 cups all purpose flour
- 1/2 teaspoon salt
- 1 teaspoon vanilla
How To Make shortbread cookies

Step 1Cream butter and confectioners sugar together until light in color. Add flour and salt. Add vanilla and blend thoroughly.

Step 2On lightly floured surface roll out dough approximately 1/4 to 1/2 inch thick. (thickness depends on preference)

Step 3Cut dough into shapes with cookie cutters. Place on baking sheet. Sprinkle with granulated sugar. Place cut cookies on cookie sheet in refrigerator or freezer for 7-10 minutes. Preheat oven to 340* degrees. Bake directly from cold storage for approximately 18 minutes. Cookies should NOT be brown on top. Cooking time may vary depending on thickness of dough.
