This unusual oatmeal cookie is always a family favorite.

Ingredients

  • 1 cup shortening
  • 1 cup white sugar
  • 1/2 cup brown sugar, lightly packed
  • 1 - egg
  • 1 1/2 cups flour
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1 1/2 cups old fashioned oatmeal
  • 3/4 cup finely chopped walnuts
  • 1 teaspoon vanilla extract

How To Make selma's best oatmeal cookies

  • Step 1
    Cream together the shortening, white sugar and brown sugar. Add egg
  • Step 2
    Sift together the flour, baking soda, and cinnamon. Add it to first mixture.
  • Step 3
    Then add the oatmeal, walnuts and vanilla. Chill dough for an hour.
  • Step 4
    Drop walnut sized pieces on a greased cookie sheet. Butter the bottom of a small glass, then dip it in granulated sugar and use to flatten out the cookie balls. Just keep dipping in sugar-you don't need to re-butter the bottom of the glass.
  • Step 5
    Bake at 350° for 10 minutes. Makes about 6 dozen cookies
