Ingredients

  • 2 c
    unbleached all-purpose flour
  • 2 c
    brown sugar, firmly packed
  • 1/2 c
    butter
  • 1 c
    chopped nuts, optional
  • 2 tsp
    cinnamon
  • 1 tsp
    soda
  • 1/2 tsp
    salt
  • 1 c
    sour cream or plain yogurt
  • 1 tsp
    vanilla extract
  • 1
    egg
  • 2 c
    apples, peeled and chopped

How to Make Second Day Apple Squares

Step-by-Step

  1. Preheat oven to 350 degrees.
  2. In a large bowl, combine the flour, brown sugar and butter.
  3. Blend at low speed, until the mixture forms fine crumbs.
  4. If you want to include them, stir in the nuts now.
  5. Place about 2 3/4 cups of the crumb mixture into an ungreased pan, about 13 x 9 inches.
  6. Press down firmly.
  7. Add the remaining ingredients (except for the apples) to the remaining crumb mixture.
  8. Blend well.
  9. Stir the chopped apples into the batter.
  10. Spoon the batter evenly over the crumb base in the pan.
  11. Bake at 350 degrees for 30-40 minutes.
  12. If you use the larger pan, bake for 25-30 minutes.
  13. Cool before cutting, or better yet, wait 24 hours before cutting.
  14. Store loosely covered.
