Ingredients

  • 2 cups unbleached all-purpose flour
  • 2 cups brown sugar, firmly packed
  • 1/2 cup butter
  • 1 cup chopped nuts, optional
  • 2 teaspoons cinnamon
  • 1 teaspoon soda
  • 1/2 teaspoon salt
  • 1 cup sour cream or plain yogurt
  • 1 teaspoon vanilla extract
  • 1 - egg
  • 2 cups apples, peeled and chopped

How To Make second day apple squares

  • Step 1
    Preheat oven to 350 degrees.
  • Step 2
    In a large bowl, combine the flour, brown sugar and butter.
  • Step 3
    Blend at low speed, until the mixture forms fine crumbs.
  • Step 4
    If you want to include them, stir in the nuts now.
  • Step 5
    Place about 2 3/4 cups of the crumb mixture into an ungreased pan, about 13 x 9 inches.
  • Step 6
    Press down firmly.
  • Step 7
    Add the remaining ingredients (except for the apples) to the remaining crumb mixture.
  • Step 8
    Blend well.
  • Step 9
    Stir the chopped apples into the batter.
  • Step 10
    Spoon the batter evenly over the crumb base in the pan.
  • Step 11
    Bake at 350 degrees for 30-40 minutes.
  • Step 12
    If you use the larger pan, bake for 25-30 minutes.
  • Step 13
    Cool before cutting, or better yet, wait 24 hours before cutting.
  • Step 14
    Store loosely covered.
