Ingredients

  • 2 cups brown sugar
  • 1 cup butter
  • 1 teaspoon vanilla extract
  • 2 - eggs
  • 2 teaspoons baking soda
  • 2 teaspoons baking powder
  • 1 cup buttermilk
  • 4 cups flour
  • FOR THE FROSTING
  • 1/2 cup butter
  • 1 cup brown sugar
  • 1/4 teaspoon salt
  • 1/4 cup buttermilk
  • 1 teaspoon vanilla extract
  • 2 1/2 cups powdered sugar
  • - optional, sea salt, white chocolate

How To Make salted caramel cookies

  • Step 1
    Because the dough needs to chill for at least 8 hours or overnight. I start the dough the day before.
  • Step 2
    In a mixing bowl cream together the brown sugar, butter and vanilla. Beat in the eggs, baking powder and soda.
  • Step 3
    Alternate adding the flour and buttermilk while mixing. Cover and let the dough chill.
  • Step 4
    The next day, let the dough sit at room temperature while you make the frosting.
  • Step 5
    In a saucepan combine the butter,brown sugar, salt and buttermilk. Cook until butter is melted and the sugar is dissolved, about 3 minutes.
  • Step 6
    Remove from heat. Pour into a mixing bowl along with the vanilla and powdered sugar. Beat until smooth and set aside.
  • Step 7
    Preheat oven to 350. Drop cookie dough onto a parchment lined baking sheet that has been lightly greased.
  • Step 8
    Bake for 10-12 minutes. These are a cake like cookie, so make sure the cookie is cooked in the center.
  • Step 9
    Let cool on wire rack. Once the cookie is cooled, you will then spread the cooked frosting. It should still be warm, over each cookie.
  • Step 10
    I then sprinkled a pinch of course sea salt on top. Then drizzle each with melted white chocolate. Store in a airtight container.
