Ingredients

  • 1 c
    butter, softened
  • 1 c
    plus 1 tbsp. sugar, divided
  • 1 c
    brown sugar
  • 2
    eggs
  • 1 tsp
    vanilla
  • 2 1/2 c
    flour
  • 3/4 c
    cocoa
  • 1 tsp
    baking soda
  • 1 pkg
    rolo candies
  • 4
    squares white baking chocolate

How to Make Rolo Cookies

Step-by-Step

  1. Preheat oven to 375 degrees.
  2. Cream butter, 1 cup sugar and brown sugar until fluffy.
  3. Add eggs slowly while beating mixture. Add vanilla.
  4. Combine flour, cocoa and baking soda, gradually adding to cream mixture.
  5. Shape a Tbsp. of dough around each rolo candy, forming a ball and dip into remaining sugar.
  6. Place on greased cookie sheet. Bake for 7-10 minutes.
  7. In microwave, melt white chocolate 1 minute and drizzle over done cookies.
