robertas pineapple cookies

These were always a fav in house. We worked like an assemble line, each having a job, then switching cause we would get bored doing the same thing. But it was always my mom who rolled out the dough...lol NOTE:-substitute sugar free preserves for those of you that are diabetic. Thanks to Cindy Strawser for that info!!!

Ingredients
- 2 sticks unsweetened butter-room temp.
- 8 ounces cream cheese-room temp
- 3 cups flour
- - pineapple preserves-or-sugar free
How To Make robertas pineapple cookies

Step 1Mix butter, cream cheese and flour and roll into a log

Step 2Chill for about an hour

Step 3roll out and cut circles about 4" rounds

Step 4fill with pineapple, and fold over and close with a fork on edges

Step 5Bake at 350 until lightly tan

Step 6cool on rack

Step 7these freeze very well
