These were always a fav in house. We worked like an assemble line, each having a job, then switching cause we would get bored doing the same thing. But it was always my mom who rolled out the NOTE:-substitute sugar free preserves for those of you that are diabetic. Thanks to Cindy Strawser for that info!!!

Ingredients For robertas pineapple cookies

  • 2 stick
    unsweetened butter-room temp.
  • 8 oz
    cream cheese-room temp
  • 3 c
  • pineapple preserves-or-sugar free

How To Make robertas pineapple cookies

  • 1
    Mix butter, cream cheese and flour and roll into a log
  • 2
    Chill for about an hour
  • 3
    roll out and cut circles about 4" rounds
  • 4
    fill with pineapple, and fold over and close with a fork on edges

    Bake at 350 until lightly tan

    cool on rack

    these freeze very well
