Roasted Peanut Butter Cookies
1/2 tspbaking powder
3/4 tspbaking soda
1 cbutter, softened
1 cbrown sugar, firmly packed
1 cwhite sugar
1 1/2 ccrunchy or regular peanut butter (i used crunchy :)
1 tsppure vanilla extract
3/4 croasted salted peanuts (ground in food processor until it looks like bread crumbs)
How to Make Roasted Peanut Butter Cookies
- Preheat oven to 350 degrees. Sift flour, baking soda, baking powder, and salt in medium bowl.
- In large bowl with electric mixture (or by hand) beat butter until creamy. Add sugars; beat until fluffy, about 4 minutes (scrape sides down), beat in peanut butter until fully mixed, then eggs, one at a time, then vanilla. Gently stir dry ingredients into peanut butter mixture. Add ground peanuts; stir gently until just mixed
- Scoop dough with a tablespoon, roll into balls, placing them 2 inches apart on a parchment covered cookie sheet. Press each dough ball with a fork dipped in cold water to make crisscross design.
- Bake until cookies are puffed and slightly brown along edges, but not top, 8-10 minutes (they will not look fully baked but they do continue to bake on the cookies sheet!). Cool cookies for a good 5 minutes before transferring them to wire rack to cool completely. You can store the cookies in an airtight container, up to 7 days. :)
