These cookies are a big hit with my family and friends. Not only is the recipe easy but it yields 6 dozen cookies. Plenty for eating, sharing and they freeze well.

Ingredients

  • 2 cups sugar (sugar substitute can by used)
  • 1 cup margarine/butter, softened
  • 1 package 15 oz ricotta cheese
  • 2 teaspoons vanilla extract
  • 2 - large eggs
  • 4 cups all purpose flour
  • 2 tablespoons baking powder
  • 1 teaspoon salt
  • ICING
  • 1 1/2 cups confectioner sugar
  • 3 tablespoons milk
  • - candy sprinkles, decorations (optional)

How To Make ricotta cheese cookies

  • Step 1
    Preheat oven to 350 degrees.
  • Step 2
    In large bowl with mixer at low speed, beat sugar and margarine/butter until well blended. Increase speed to high; beat until light and fluffy, about 5 minutes.
  • Step 3
    At medium speed add ricotta, vanilla and eggs until well combined.
  • Step 4
    Reduce speed to low. Add flour, baking powder, salt; beat until dough forms.
  • Step 5
    Drop by level tablespoon, 2 inches apart, on ungreased cookie sheet.
  • Step 6
    Bake about 15 minutes or until cookies are very lightly golden (cookies will be soft). Remove cookies to wire rack to cool. Repeat.
  • Step 7
    Prepare Icing: In small bowl stir confectioner sugar and milk until smooth. Spread on cooled cookies. Decorate (optional). Allow icing to dry for 1 hour.
  • Step 8
    Yield: 6 dozen cookies
