Ingredients
- 1 1/2 cups flour
- 3/4 cup butter, room temperature
- 1/2 cup confectioners sugar
- 1- 8 ounces bar of cream cheese
- 1 1/2 cups regular sugar
- 1/4 cup flour
- 1/4 teaspoon salt
- 1 - egg
- 2 cups diced rhubarb
How To Make rhubarb bars

Step 1Mix first 3 ingredients into crumbs. Reserve 1/2 cup of crumbs for topping. Press remaining crumbs into a 9x13 pan sprayed with cooking spray. Bake 10 minutes.

Step 2While crust is baking, beat the next 5 ingredients till smooth. Add diced rhubarb. Pour over baked crust and sprinkle reserved crumbs over top. Bake 40 minutes more. Refrigerate and enjoy!
