Ingredients

  • 3 c
    flour
  • 1 tsp
    baking soda
  • 1 1/2 tsp
    baking powder
  • 2 Tbsp
    cocoa powder
  • 1/2 tsp
    salt
  • 2
    eggs
  • 1 1/2 c
    sugar
  • 1/2 c
    vegetable oil
  • 1 1/2 tsp
    vanilla
  • 1 c
    buttermilk
  • 8
    drops red food coloring
  • FOR THE FILLING

  • 1/2 c
    butter
  • 1/4 c
    crisco
  • 5 Tbsp
    half & half
  • 3 1/2 c
    powdered sugar
  • 1 tsp
    vanilla
  • 2 Tbsp
    turbinado sugar

How to Make Red Velvet Whoopie Pies

Step-by-Step

  1. Preheat oven to 350 degrees.
  2. Sift flour, baking powder, baking soda, cocoa, and salt together.
  3. In a mixing bowl, add eggs and sugar. Beat until well combined, batter should be a pale yellow, about three minutes. Add in oil and vanilla. Beat until combined.
  4. Gradually add in flour and buttermilk mixture. Add about one cup flour mix, then half a cup buttermilk. Blend. Repeat this process until everything is added.
  5. Drop tbsp size dollops on a cookie sheet and bake for 11 minutes.

    Let cookies cool, then smear icing on one side of a cookie and press together with another cookie to form whoopie pies.
  6. Prepare icing by creaming crisco and butter. Add in powdered sugar and half & half. Once combined, add vanilla and turbinado sugar. Smear onto cookies.
