raspberry oatmeal bars
This recipe can be made with any flavor jam, I just prefer raspberry.

Makes about 2 dozen bars
Ingredients
- 1 cup butter, cold
- 1 3/4 cups all purpose flour
- 1 3/4 cups oatmeal, uncooked
- 1 cup brown sugar, firmly packed
- 1 1/2 teaspoons baking soda
- 1 3/4 cups raspberry filling or 1 12 ounce jar of raspberry jam
How To Make raspberry oatmeal bars

Step 1pre-heat oven to 350. Prepare 9"x13" baking dish by either buttering it or spaying with no stick canola oil spray.

Step 2In bowl whisk together flour, brown sugar and baking soda. Cut chilled butter in small pieces and add to flour mixture. Now using a pastry blender cut in the butter until mixture is well combined and resembles small peas. Now mix in the oats, at this point I push up my sleeves and use my hands!

Step 3Press 2/3 of the mixture into the bottom of the baking dish. Now spread raspberry filling evenly over the bottom crust. Sprinkle remaining flour mixture over the top of the filling. Bake 30 minutes or till golden brown. Let cool completely before cutting into desired sized bars. I sometimes chill them before cutting. Store in airtight container in the fried, take out and let come to room temp before serving.
