I really wish I could remember where I got this recipe but I've had it for such a very long time. I bake this for the holidays to give as gifts but it is good at any time of the year. It is one of my most requested recipes.

Ingredients

  • COOKIE BASE
  • 1/2 cup sugar
  • 1 1/2 cups flour
  • 1/2 teaspoon salt
  • 3 teaspoons baking powder
  • 1 - egg
  • 2 tablespoons butter
  • 1/2 cup milk
  • 1 teaspoon vanilla extract
  • CRUMB TOPPING
  • 4 cups flour
  • 2 cups sugar
  • 2 teaspoons cinnamon
  • 1/2 teaspoon salt
  • 1 pound melted butter
  • FILLING
  • 1 jar (small jar) seedless red raspberry jam softened or warmed

How To Make raspberry crumb bars

  • Step 1
    Preheat oven to 350 degrees.
  • Step 2
    Grease 18x12x1 pan (jelly roll).
  • Step 3
    Mix sugar, flour, baking powder and salt until well incorporated.
  • Step 4
    Add egg, butter milk and vanilla. Mix well.
  • Step 5
    Spread evenly in greased pan.
  • Step 6
    Spread softened or warmed raspberry jam evenly over base.
  • Step 7
    Combine flour, sugar, cinnamon and salt.
  • Step 8
    Sprinkle evenly over cookie base and filling.
  • Step 9
    Cool before cutting and sprinkle with confectioner's sugar if desired.
  • Step 10
    Makes up to 50 small bars or cut to whatever size you wish.
