I really wish I could remember where I got this recipe but I've had it for such a very long time. I bake this for the holidays to give as gifts but it is good at any time of the year. It is one of my most requested recipes.

Ingredients

  • COOKIE BASE

  • 1/2 c
    sugar
  • 1 1/2 c
    flour
  • 1/2 tsp
    salt
  • 3 tsp
    baking powder
  • 1
    egg
  • 2 Tbsp
    butter
  • 1/2 c
    milk
  • 1 tsp
    vanilla extract
  • CRUMB TOPPING

  • 4 c
    flour
  • 2 c
    sugar
  • 2 tsp
    cinnamon
  • 1/2 tsp
    salt
  • 1 lb
    melted butter
  • FILLING

  • 1 jar(s)
    (small jar) seedless red raspberry jam softened or warmed

How to Make Raspberry Crumb Bars

Step-by-Step

  1. Preheat oven to 350 degrees.
  2. Grease 18x12x1 pan (jelly roll).
  3. Mix sugar, flour, baking powder and salt until well incorporated.
  4. Add egg, butter milk and vanilla. Mix well.
  5. Spread evenly in greased pan.
  6. Spread softened or warmed raspberry jam evenly over base.
  7. Combine flour, sugar, cinnamon and salt.
  8. Sprinkle evenly over cookie base and filling.
  9. Cool before cutting and sprinkle with confectioner's sugar if desired.
  10. Makes up to 50 small bars or cut to whatever size you wish.
