I really wish I could remember where I got this recipe but I've had it for such a very long time. I bake this for the holidays to give as gifts but it is good at any time of the year. It is one of my most requested recipes.

Ingredients

COOKIE BASE

1/2 c
sugar
1 1/2 c
flour
1/2 tsp
salt
3 tsp
baking powder
1
egg
2 Tbsp
butter
1/2 c
milk
1 tsp
vanilla extract

CRUMB TOPPING

4 c
flour
2 c
sugar
2 tsp
cinnamon
1/2 tsp
salt
1 lb
melted butter

FILLING

1 jar(s)
(small jar) seedless red raspberry jam softened or warmed

How to Make Raspberry Crumb Bars

Step-by-Step

  • 1Preheat oven to 350 degrees.
  • 2Grease 18x12x1 pan (jelly roll).
  • 3Mix sugar, flour, baking powder and salt until well incorporated.
  • 4Add egg, butter milk and vanilla. Mix well.
  • 5Spread evenly in greased pan.
  • 6Spread softened or warmed raspberry jam evenly over base.
  • 7Combine flour, sugar, cinnamon and salt.
  • 8Sprinkle evenly over cookie base and filling.
  • 9Cool before cutting and sprinkle with confectioner's sugar if desired.
  • 10Makes up to 50 small bars or cut to whatever size you wish.
