This recipe calls for grated coconut. I chose to use unsweetened coconut because sweetened coconut makes this recipe very sweet.

Ingredients

  • 1 cup all purpose flour
  • 1 teaspoon baking powder
  • pinch salt
  • 1/2 cup butter
  • 2 tablespoons milk
  • 1 - egg
  • 1 cup sugar
  • 2 cups coconut, grated
  • 1 jar (8 oz.) raspberry jam

How To Make raspberry bars

  • Step 1
    Sift flour, baking powder & salt into a bowl.
  • Step 2
    Cut in the butter & add milk.
  • Step 3
    Knead very lightly. Press into a 10 x 10 pan.
  • Step 4
    Bake in a preheated 350 oven for 10-15 minutes until light brown.
  • Step 5
    While dough is baking, beat egg with sugar & fold in coconut.
  • Step 6
    Spread baked dough with jam, then with coconut mixture.
  • Step 7
    Return to oven for 20-25 minutes until a very light brown.
  • Step 8
    Cut into bars when cool.
