This recipe calls for grated coconut. I chose to use unsweetened coconut because sweetened coconut makes this recipe very sweet.

Makes 25-2 in. bars
Ingredients
- 1 cup all purpose flour
- 1 teaspoon baking powder
- pinch salt
- 1/2 cup butter
- 2 tablespoons milk
- 1 - egg
- 1 cup sugar
- 2 cups coconut, grated
- 1 jar (8 oz.) raspberry jam
How To Make raspberry bars

Step 1Sift flour, baking powder & salt into a bowl.

Step 2Cut in the butter & add milk.

Step 3Knead very lightly. Press into a 10 x 10 pan.

Step 4Bake in a preheated 350 oven for 10-15 minutes until light brown.

Step 5While dough is baking, beat egg with sugar & fold in coconut.

Step 6Spread baked dough with jam, then with coconut mixture.

Step 7Return to oven for 20-25 minutes until a very light brown.

Step 8Cut into bars when cool.
