This recipe calls for grated coconut. I chose to use unsweetened coconut because sweetened coconut makes this recipe very sweet.

Makes 25-2 in. bars


  • 1 c
    all purpose flour
  • 1 tsp
    baking powder
  • pinch
  • 1/2 c
  • 2 Tbsp
  • 1
  • 1 c
  • 2 c
    coconut, grated
  • 1 jar(s)
    (8 oz.) raspberry jam

How to Make Raspberry Bars


  1. Sift flour, baking powder & salt into a bowl.
  2. Cut in the butter & add milk.
  3. Knead very lightly. Press into a 10 x 10 pan.
  4. Bake in a preheated 350 oven for 10-15 minutes until light brown.
  5. While dough is baking, beat egg with sugar & fold in coconut.
  6. Spread baked dough with jam, then with coconut mixture.
  7. Return to oven for 20-25 minutes until a very light brown.
  8. Cut into bars when cool.
