It's not a family camp-out without Ranger Cookies.And since we're taking a brief camping trip, tho't I'd share the recipe while they bake.These cookies freeze well and travel well...and with all that cereal they can't be all bad....can they? :D

Ingredients

  • 1 c
    butter, unsalted
  • 1 c
    brown sugar
  • 1 c
    sugar
  • 2
    eggs
  • 1 tsp
    vanilla
  • 2 c
    flour
  • 1/2 tsp
    baking powder
  • 1 tsp
    baking soda
  • 1/4 tsp
    salt
  • 2 c
    oatmeal
  • 2 c
    cornflake cereal
  • 1 c
    coconut
  • 1 c
    nuts, chpd in large pieces
  • 1 c
    butterscotch chips

How to Make Ranger Cookies

Step-by-Step

  1. In a large mixing bowl, cream butter and sugars. Add eggs & vanilla.Stir together flour, bkg. powder, bkg. soda and salt. Add to butter mix. Gently stir in remaining ingredients.Drop by spoonfuls on lightly greased baking sheet. Bake at 375 10-12 minutes. Transfer to rack. Cool completely before freezing.
