raisin filled cookies

Received this recipe from my Grandma one of the first her and I made together. When making these she didn't use a mixer but I do.

Ingredients

  • 1 cup sugar
  • 1/2 cup butter or margarine softened
  • 1 - egg
  • 1/2 cup milk
  • 3 1/2 cups flour
  • 1 teaspoon baking soda
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla
  • FILLING MIXTURE
  • 1 cup seedless raisins
  • 1/2 cup water or orange juice
  • 1 teaspoon lemon juice
  • 1/2 cup walnuts or pecans
  • 1 cup sugar
  • 1/4 teaspoon salt
  • 1 1/2 cups flour

How To Make raisin filled cookies

  • Step 1
    Directions for filling mixture: Combine all ingredients and cook. Stirring over medium heat until thick. Cool before using.
  • Step 2
    Blend sugar, butter and eggs until smooth.
  • Step 3
    Add dry ingredients which have been sifted together, alternate with the milk.
  • Step 4
    Mix thoroughly and roll out thinly on floured board cut into rounds with a 3" cookie cutter. I take my thumb and make an indent. Put 1 teas filling on each cookie and place another round on top. Crimp edges together. Make small vents.
  • Step 5
    Bake in 375 degree oven about 12 to 15 minutes or until lightly browned.
