Received this recipe from my Grandma one of the first her and I made together. When making these she didn't use a mixer but I do.

Ingredients

  • 1 c
    sugar
  • 1/2 c
    butter or margarine softened
  • 1
    egg
  • 1/2 c
    milk
  • 3 1/2 c
    flour
  • 1 tsp
    baking soda
  • 2 tsp
    baking powder
  • 1/2 tsp
    salt
  • 1 tsp
    vanilla
  • FILLING MIXTURE

  • 1 c
    seedless raisins
  • 1/2 c
    water or orange juice
  • 1 tsp
    lemon juice
  • 1/2 c
    walnuts or pecans
  • 1 c
    sugar
  • 1/4 tsp
    salt
  • 1 1/2 c
    flour

How to Make Raisin Filled Cookies

Step-by-Step

  1. Directions for filling mixture: Combine all ingredients and cook. Stirring over medium heat until thick. Cool before using.
  2. Blend sugar, butter and eggs until smooth.
  3. Add dry ingredients which have been sifted together, alternate with the milk.
  4. Mix thoroughly and roll out thinly on floured board cut into rounds with a 3" cookie cutter. I take my thumb and make an indent. Put 1 teas filling on each cookie and place another round on top. Crimp edges together. Make small vents.
  5. Bake in 375 degree oven about 12 to 15 minutes or until lightly browned.
