After seeing the 3 ingredient pnb cookie recipe (1 c pnb, 1 c sugar and 1 egg) I tried to capture an old family favorite - pnb coconut bar cookies!

Ingredients

  • 1 c
    peanut butter. note: i tried extra crunchy pnb and the cookies were a bit dry
  • 1 c
    white sugar (or 3/4 brown and 1/4 white)
  • 1
    egg
  • 1/2 tsp
    baking soda
  • 1 tsp
    vanilla
  • 3/4 c
    coconut

How to Make Quick and Easy Peanut Butter Coconut Cookies

Step-by-Step

  1. Mix pnb, sugar, soda, vanilla and egg until blended (no mixer needed - can be done by hand!)
  2. Add coconut and blend thoroughly
  3. Refrigerator for one hour
  4. Set oven to 350 degrees
    Place balls of dough on parchment covered cookie sheet
    Lightly flatten with fork
    Bake 8-10 minutes. Do not overbake - only until they are soft and slightly brown on bottom
    Store in airtighf container
