quick and easy peanut butter coconut cookies
After seeing the 3 ingredient pnb cookie recipe (1 c pnb, 1 c sugar and 1 egg) I tried to capture an old family favorite - pnb coconut bar cookies!

1 cpeanut butter. note: i tried extra crunchy pnb and the cookies were a bit dry

1 cwhite sugar (or 3/4 brown and 1/4 white)

1egg

1/2 tspbaking soda

1 tspvanilla

3/4 ccoconut
How To Make quick and easy peanut butter coconut cookies

1Mix pnb, sugar, soda, vanilla and egg until blended (no mixer needed - can be done by hand!)

2Add coconut and blend thoroughly

3Refrigerator for one hour

4Set oven to 350 degrees Place balls of dough on parchment covered cookie sheet Lightly flatten with fork Bake 8-10 minutes. Do not overbake - only until they are soft and slightly brown on bottom Store in airtighf container
