Ingredients
- BEAT TOGETHER
- 2 sticks salted butter, softened
- 1 cup brown sugar, packed
- 1/2 cup cup granulated sugar
- ADD
- 2 - eggs
- 1 teaspoon vanilla extract
- COMBINE & ADD
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- STIR IN
- 3 cups quaker oats (quick)
- 3/4 cup coconut or raisins (optional)
How To Make quaker oats vanishing oatmeal cookies

Step 1Preheat oven to 350. Beat together butter and sugars until creamy. Add eggs and vanilla; beat well. Add combined flour, baking soda, salt; mix well. Slowly stir in oats and optional coconut/raisins.

Step 2Drop by rounded tablespoon onto parchment lined cookie sheet. ( I use small melon scoop). Bake 10-12 minutes or until golden brown. Cool 1 minuted on sheet, remove to wire rack.
