Ingredients
- 2 cups packed brown sugar
- 1 cup vegetable oil
- 1 1/2 cups pumpkin puree
- 2 - eggs
- 3 cups all purpost flour
- 1 teaspoon salt
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1 teaspoon vanilla ext
- 2 tablespoons cinnamon
- CREAM CHEESE FILLING
- 4 ounces softened cream cheese
- 6 tablespoons butter, soft
- 1/2 teaspoon vanilla ext
- 2 cups powdered sugar
How To Make pumpkin whoopie pies

Step 1Combine oil, brown sugar, pumpkin puree and eggs, beat. Add the flour, salt, baking powder, baking soda, 1 tsp vanilla, cinnamon and mix well. Do not over mix. Drop by Tablespoon fulls onto greased cookie sheet. Bake 10 to 12 min in a preheated 350 oven. Be carefull not to overbake these. Just when they are set in the middle they are done. Remove from pan and cool.

Step 2Beat cream cheese and butter till smooth, add vanilla and powdered sugar..beat about 5 minutes. when cookies have cooled, spread filling onto cookie and sandwich together.
