Ingredients For pumpkin whoopie pies

  • 2 c
    packed brown sugar
  • 1 c
    vegetable oil
  • 1 1/2 c
    pumpkin puree
  • 2
    eggs
  • 3 c
    all purpost flour
  • 1 tsp
    salt
  • 1 tsp
    baking powder
  • 1 tsp
    baking soda
  • 1 tsp
    vanilla ext
  • 2 Tbsp
    cinnamon
  • CREAM CHEESE FILLING
  • 4 oz
    softened cream cheese
  • 6 Tbsp
    butter, soft
  • 1/2 tsp
    vanilla ext
  • 2 c
    powdered sugar

How To Make pumpkin whoopie pies

    Combine oil, brown sugar, pumpkin puree and eggs, beat. Add the flour, salt, baking powder, baking soda, 1 tsp vanilla, cinnamon and mix well. Do not over mix. Drop by Tablespoon fulls onto greased cookie sheet. Bake 10 to 12 min in a preheated 350 oven. Be carefull not to overbake these. Just when they are set in the middle they are done. Remove from pan and cool.

    Beat cream cheese and butter till smooth, add vanilla and powdered sugar..beat about 5 minutes. when cookies have cooled, spread filling onto cookie and sandwich together.
