A family recipe, passed from hubby's Grandmother. This recipe is a nice variation on pumpkin pie, served as a bar instead - great served slightly warm, topped with whipped cream.

Ingredients

  • 1 cup flour
  • 1/2 cup rolled (quick) oatmeal
  • 1/2 cup brown sugar, firmly packed
  • 1/2 cup butter or margarine
  • 1 can pumpkin (1 lb)
  • 1 can evaporated milk
  • 2 - eggs
  • 1/2 teaspoon ginger powder
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon, ground
  • 1/4 teaspoon cloves, ground
  • 3/4 cup sugar
  • 1/2 cup pecans, in pieces
  • 1/2 cup brown sugar, firmly packed
  • 2 tablespoons butter, melted

How To Make pumpkin pie squares

  • Step 1
    Preheat oven to 350
  • Step 2
    Combine flour, oats, 1/2c brown sugar and 1/2c butter. Mix well until crumbly, using electric mixer on low.
  • Step 3
    Press into un-greased 9x13 pan.
  • Step 4
    Bake @350 for 15 minutes.
  • Step 5
    Combine pumpkin, milk, eggs, white sugar and seasonings. Mix well.
  • Step 6
    Pour pumpkin mixture over crust. Return to oven @350 for 20 minutes.
  • Step 7
    Meanwhile, prepare topping: pecans, 1/2c brown sugar and 2 TBS butter. Mix with fork until crumbly. Sprinkle over bars and return to oven @350 for 15-20 minutes. The topping is optional, but remember to add the additional cooking time if you do not add the topping.
  • Step 8
    Cool to desired serving temp. Or refrigerate until ready to serve. Cut into squares. Serving # will depend on how big you cut them.
