This is a super-moist cookie that everyone around my house raves about! I prefer to use old fashioned oats but either will do!

Ingredients

1 1/4 c
all purpose flour
1 tsp
baking soda
1/2 tsp
salt
1/2 tsp
cinnamon
1 c
butter (softened)
3/4 c
sugar
3/4 c
brown sugar
2
eggs
1 c
pumpkin puree
1 Tbsp
vanilla
3 c
oatmeal (quick or old fashioned)
1 pkg
butterscotch chips

How to Make Pumpkin Oatmeal Scotchies

Step-by-Step

  • 1Preheat oven to 375° F. Combine flour, baking soda, salt and cinnamon in small bowl. Beat butter, granulated sugar, brown sugar, eggs, pumpkin and vanilla extract in large mixer bowl. Gradually beat in flour mixture. Stir in oats and morsels.
  • 2Drop by rounded tablespoon onto ungreased baking sheets. BAKE for 7 to 8 minutes for chewy cookies or 9 to 10 minutes for crisp cookies.
  • 3VERY IMPORTANT: Cool on baking sheets for 2 minutes before you remove to wire racks to cool completely.
