pumpkin oatmeal scotchies

This is a super-moist cookie that everyone around my house raves about! I prefer to use old fashioned oats but either will do!

Ingredients

  • 1 1/4 cups all purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1 cup butter (softened)
  • 3/4 cup sugar
  • 3/4 cup brown sugar
  • 2 - eggs
  • 1 cup pumpkin puree
  • 1 tablespoon vanilla
  • 3 cups oatmeal (quick or old fashioned)
  • 1 package butterscotch chips

How To Make pumpkin oatmeal scotchies

  • Step 1
    Preheat oven to 375° F. Combine flour, baking soda, salt and cinnamon in small bowl. Beat butter, granulated sugar, brown sugar, eggs, pumpkin and vanilla extract in large mixer bowl. Gradually beat in flour mixture. Stir in oats and morsels.
  • Step 2
    Drop by rounded tablespoon onto ungreased baking sheets. BAKE for 7 to 8 minutes for chewy cookies or 9 to 10 minutes for crisp cookies.
  • Step 3
    VERY IMPORTANT: Cool on baking sheets for 2 minutes before you remove to wire racks to cool completely.
