Throughout the process over the past couple of years of perfecting this recipe, every time I have baked these, they quickly disappear! They are chewy, delicious, and perfect for the holidays! Notes: First, I used the Pumpkin Pie Spice recipe posted by Nicole P. here on J.A.P. Second, I highly recommend baking these on parchment paper. The cookies don't stick and there is virtually no clean-up, at least not of the cookie sheets! Third, these cookies do NOT spread out much at all, so you can fit more than a dozen on a cookie sheet at o

Ingredients

  • 1 stick butter, softened
  • 1 cup sugar
  • 1 cup brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup pumpkin
  • 1 cup oatmeal, uncooked
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1 teaspoon pumpkin pie spice*
  • 1/2 teaspoon salt
  • 1 cup raisins
  • 2 1/2 cups all purpose flour

How To Make pumpkin oatmeal raisin cookies

  • Step 1
    Preheat oven to 350 degrees.
  • Step 2
    Cream butter and sugars. Add egg, vanilla, and pumpkin.
  • Step 3
    In a separate bowl, stir together oats, baking powder, cinnamon, pumpkin pie spice, salt, flour, and raisins.
  • Step 4
    Add dry mixture into pumpkin mixture and STIR.
  • Step 5
    Drop cookies by heaping tsp. onto greased cookie sheet or one covered with parchment paper (I HIGHLY recommend this!).
  • Step 6
    Bake 12 to 15 minutes or until slightly browned around the edges. Move to cooling rack immediately.
