pumpkin oatmeal raisin cookies
Throughout the process over the past couple of years of perfecting this recipe, every time I have baked these, they quickly disappear! They are chewy, delicious, and perfect for the holidays! Notes: First, I used the Pumpkin Pie Spice recipe posted by Nicole P. here on J.A.P. Second, I highly recommend baking these on parchment paper. The cookies don't stick and there is virtually no clean-up, at least not of the cookie sheets! Third, these cookies do NOT spread out much at all, so you can fit more than a dozen on a cookie sheet at o

Makes 3 to 4 dozen
Ingredients
- 1 stick butter, softened
- 1 cup sugar
- 1 cup brown sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1 cup pumpkin
- 1 cup oatmeal, uncooked
- 1 teaspoon baking powder
- 1 teaspoon cinnamon
- 1 teaspoon pumpkin pie spice*
- 1/2 teaspoon salt
- 1 cup raisins
- 2 1/2 cups all purpose flour
How To Make pumpkin oatmeal raisin cookies

Step 1Preheat oven to 350 degrees.

Step 2Cream butter and sugars. Add egg, vanilla, and pumpkin.

Step 3In a separate bowl, stir together oats, baking powder, cinnamon, pumpkin pie spice, salt, flour, and raisins.

Step 4Add dry mixture into pumpkin mixture and STIR.

Step 5Drop cookies by heaping tsp. onto greased cookie sheet or one covered with parchment paper (I HIGHLY recommend this!).

Step 6Bake 12 to 15 minutes or until slightly browned around the edges. Move to cooling rack immediately.
