A yummy treat combining chocolate and pumpkin in a wonderful balance of flavors. Note: Pumpkin spice can be substituted with 1/4 tsp ground cloves and 1/4 tsp ground nutmeg.

Ingredients
- STEP ONE
- 2 cups all purpose flour
- 2 1/3 cups old fashioned oats
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 2 teaspoons cinnamon
- 1/2 teaspoon pumpkin pie spices
- STEP TWO
- 1 cup butter, unsalted - softened
- 3/4 cup dark brown sugar
- 3/4 cup granulated sugar
- 2 tablespoons honey or maple syrup
- STEP THREE
- 1 cup pumpkin puree
- 1 large egg
- 1 1/2 teaspoons vanilla extract
- STEP FOUR
- 2 cups chocolate chips

Step 1Preheat oven to 350 degrees F.

Step 2Grease baking sheets or line with silpat or parchment paper.

Step 3Combine ingredients from Step One in a bowl.

Step 4Cream ingredients from Step Two in a large mixer bowl until light and fluffy (about 3 minutes).

Step 5Add Step Three ingredients and mix well.

Step 6Add combined ingredients from Step One and mix until just combined. Do not over mix.

Step 7Stir in ingredients from Step Four.

Step 8Chill dough for 30 minutes.

Step 9Form dough into golf ball sized scoops, then bake for 14-16 minutes, depending on size of cookie. Use Pampered Chef's Medium or Large scoop for consistency.
