Ingredients

  • 1 cup flour
  • 2 cups quick oats
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 1/4 teaspoon all spice
  • 1/4 teaspoon cloves
  • 1/8 teaspoon ginger
  • 2 tablespoons butter
  • 1/3 cup white sugar
  • 1/3 cup brown sugar
  • 1 - egg
  • 6 tablespoons pumpkin puree
  • 1 teaspoon vanilla
  • 1/4 cup chocolate chips
  • 1/2 cup chopped walnuts

How To Make pumpkin oatmeal chocolate chip cookie

  • Step 1
    Preheat oven to 350 degrees.
  • Step 2
    In the bowl of a stand mixer, cream together butter and sugars for about 2 minutes. Add in egg and mix until well blended. Add pumpkin and vanilla and mix for another minute.
  • Step 3
    In a separate bowl whisk together flour, oatmeal, baking powder, baking soda, cinnamon, salt, all spice, cloves, and ginger. Slowly pour dry mixture into the wet mixture, mixing slowly to incorporate.
  • Step 4
    Stir in chocolate chips and walnuts.
  • Step 5
    Drop tablespoon size dollops onto a cookie tray lined with parchment or a silpat. Bake for 12 minutes.
