I make these when I have leftover pumpkin from making a pie.

Makes about 4 dozen
Ingredients
- 1/2 cup butter or shortening
- 1 cup sugar
- 2 - eggs, beaten
- 1 cup pumpkin
- 2 cups sifted all-purpose flour
- 4 teaspoons baking powder
- 1 teaspoon salt
- 2 1/2 teaspoons cinnamon
- 1/2 teaspoon nutmeg
- 1/4 teaspoon ginger
- 1 cup raisins
- 1 cup chopped nuts
How To Make pumpkin nut cookies

Step 1Cream shortening; add sugar gradually. Cream until light and fluffy.

Step 2Add eggs and pumpkin; mix well. Sift flour, baking powder, salt and spices together. Stir in dry ingredients and mix until blended.

Step 3Add raisins and nuts. Drop by teaspoons on greased cookie sheets. Bake in preheated 350 degrees F. oven for approximately 15 minutes or until cookies are golden on edges and set in center. Be careful not to overbake.
