I made this up over Christmas holiday when I was faced with a can of pumpkin and a cake mix to make a dessert. The results were delicious!

Ingredients

  • 1 box
    yellow cake mix
  • 3
    eggs
  • 1/2 c
    oil
  • 1/2 c
    applesauce
  • 1 can(s)
    pumpkin, 16 oz.
  • 1 c
    walnuts, chopped
  • 1 Tbsp
    pumpkin pie spices
  • 1 tsp
    vanilla
  • 1/2 tsp
    orange peel
  • 1 Tbsp
    orange juice (optional)
  • CREAM CHEESE FROSTING

  • 1 pkg
    cream cheese, 3 oz (softened)
  • 2 c
    powdered sugar
  • 6 Tbsp
    butter, softened
  • 1 Tbsp
    milk
  • 1/2 tsp
    vanilla
  • 1 tsp
    orange juice

How to Make Pumpkin Nut Bars

Step-by-Step

  1. Mix all ingredients for bars until well blended.
  2. Pour into greased 9x13 pan.
  3. Bake at 350 degrees for 35 minutes.
  4. Remove to cooling racks until completely cool, then frost with cream cheese frosting.
  5. For frosting: mix well with blender until creamy (at least 3 minutes). If too thick, thin with more orange juice or milk until you get a good, spreadable consistency.
