I love my Pumpkin Spice Snickerdoodles that I have on here...but I wanted to incorporate actual pumpkin...so today I did just that. AND I love the way they turned out!!! I hope you do too! :o)

Ingredients

  • 1/2 cup butter, softened
  • 1/2 cup butter flav crisco
  • 1 1/2 cups sugar
  • 1 - egg
  • 1 teaspoon vanilla
  • 1/2 cup pumpkin (heaping 1/2 cup) canned or cooked
  • 3 cups flour
  • 2 teaspoons cream of tartar
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon pumpkin pie spice, if you don't have this, there are a couple recipes for it on this site
  • 1/2 cup sugar, for rolling
  • 1 tablespoon pumpkin pie spice, for rolling

How To Make pumpkin doodles

  • Step 1
    Preheat oven to 375. Cream together butter and crisco, then add sugar, egg, vanilla and pumpkin mixing well. In separate bowl whisk together flour, tartar, soda, salt and 1 tsp pumpkin pie spice. Then add to creamed mixture, mixing until it comes together.
  • Step 2
    In a small dish mix together 1/2 c sugar and 1T pumpkin pie spice for rolling. Shape dough into 1 1/2" balls, roll in sugar mixture, place on cookie sheet, flatten slightly with bottom of glass. Bake at 375 for 10-13 minutes. Mine came out perfect at 12 min.
  • Step 3
    Remove pans from oven allow to cool on pans 2 minutes then remove to racks to cool completely. Enjoy!!!
