Made these the first time for a co-worker of my husband who asked him if I would make them. To my surprise they were really good.
Nice around Thanksgiving when you have an extra can of pumpkin you want to use up.

Ingredients

sifted flour
1 tsp
baking powder
1 tsp
baking soda
1 tsp
cinnamon
1/2 tsp
salt
1
egg
1 tsp
vanilla
1 c
butter or margarine
1 c
sugar
1 c
cooked or canned pumpkin (never tried cooked)
1/2 c
walnuts chopped
1/2 c
dates or raisins chopped (i use raisins)
~~~~frosting:~~~~~~
3 Tbsp
butter
1/2 c
brown sugar
1 c
confectioners sugar
4 Tbsp
milk
3/4 tsp
vanilla

How to Make Pumpkin Cookies w/frosting

Step-by-Step

  • 1Sift flour and baking powder, baking soda, salt and cinnamon. Cream butter and sugar together. Add pumpkin and egg, beat well. Add flour mix all at once. Stir to obtain a smooth batter, add nut, fruits and vanilla.
  • 2Drop by teaspoonfuls on greased cookie sheet and bake at 350 degrees for 10 min.
  • 3FROSTING:
    Combine butter, milk and brown sugar in saucepan. Heat to boiling and boil for 2 minutes stirring constantly. Remove from heat and cool. Stir in confectioners sugar and vanilla.

    Best when frosted.
