pumpkin cookies w/frosting

Made these the first time for a co-worker of my husband who asked him if I would make them. To my surprise they were really good. Nice around Thanksgiving when you have an extra can of pumpkin you want to use up.

Ingredients

  • 2 cups sifted flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 1 - egg
  • 1 teaspoon vanilla
  • 1 cup butter or margarine
  • 1 cup sugar
  • 1 cup cooked or canned pumpkin (never tried cooked)
  • 1/2 cup walnuts chopped
  • 1/2 cup dates or raisins chopped (i use raisins)

  • 3 tablespoons butter
  • 1/2 cup brown sugar
  • 1 cup confectioners sugar
  • 4 tablespoons milk
  • 3/4 teaspoon vanilla

How To Make pumpkin cookies w/frosting

  • Step 1
    Sift flour and baking powder, baking soda, salt and cinnamon. Cream butter and sugar together. Add pumpkin and egg, beat well. Add flour mix all at once. Stir to obtain a smooth batter, add nut, fruits and vanilla.
  • Step 2
    Drop by teaspoonfuls on greased cookie sheet and bake at 350 degrees for 10 min.
  • Step 3
    FROSTING: Combine butter, milk and brown sugar in saucepan. Heat to boiling and boil for 2 minutes stirring constantly. Remove from heat and cool. Stir in confectioners sugar and vanilla. Best when frosted.
