Still hunting out pumpkin cookie recipes, since mine is misplaced. This one is from Allrecipes as well as the first one I posted. Don't over beat this recipe, in order to keep it from being fluffed-up like cake. THERE ARE NO EGGS IN THIS RECIPE.

Ingredients

  • - there are no eggs in this recipe
  • 1/2 cup shortening
  • 1 cup white sugar
  • 1 cup pumpkin puree
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour or unbleached all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1 1/2 cups butterscotch chips (i will use less chips and sometimes vanilla ones.)
  • - other add-ins: raisins, dried cranberries, nuts, other flavor chips or other spices

How To Make pumpkin cookies i (not cakey)

  • Step 1
    Preheat oven to 350°F. Grease cookie sheets.
  • Step 2
    In a medium bowl, cream shortening and sugar with mixer, but don't over beat. Stir in pumpkin and vanilla with a spoon. And, continue with the spoon.
  • Step 3
    Sift together dry ingredients; stir into the creamed mixture. Then, mix in the butterscotch chips. Drop dough by teaspoonfuls, onto prepared cookie sheets.
  • Step 4
    Bake 8-10 minutes. Allow cookies to cool for a minute on cookie sheets, before transferring to wire cooling racks. Makes 3 dozen.
