This is my Aunt Brenda Meyers' recipe... A couple of years my aunt came in to our house on a Saturday before Christmas and we baked many kinds of Christmas cookies. This became a favorite of ours....The texture is cake like and very soft. The nuts and raisins are excellent in them, but they are yummy without them as well.

Ingredients

  • 2 cups flour
  • 1 teaspoon salt
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 3/4 cup shortening
  • 1 cup granulated sugar
  • 1 - egg
  • 1 cup canned pumpkin
  • 1 teaspoon vanilla extract
  • 1/2 cup chopped walnuts (optional)
  • 1/2 cup raisins (optional)
  • FROSTING INGREDIENTS
  • 3 tablespoons melted margarine or butter
  • 1/2 cup brown sugar, firmly packed
  • 6 tablespoons milk
  • 1 pound powdered sugar

How To Make pumpkin cookies

  • Step 1
    Heat oven to 375 degrees. Sift together flour, salt, baking powder, baking soda, cinnamon. Set aside.
  • Step 2
    Cream shortening and add granulated sugar, and cream.
  • Step 3
    Add egg and pumpkin to the shortening and sugar and mix well. Add walnuts and raisins if desired.
  • Step 4
    Add flour mixture and mix well.
  • Step 5
    Drop by teaspoonfuls unto greased cookie sheets. DO NOT USE AIR BAKE PANS. Bake 10 to 12 minutes, until done. Cool on cooling racks.
  • Step 6
    When cookies are cooled mix together margarine, brown sugar, and milk, add powdered sugar to make a thin easy to spread frosting. Frost cookies. Store in air tight container in cool spot.
