This is my Aunt Brenda Meyers' recipe... A couple of years my aunt came in to our house on a Saturday before Christmas and we baked many kinds of Christmas cookies. This became a favorite of ours....The texture is cake like and very soft. The nuts and raisins are excellent in them, but they are yummy without them as well.

Ingredients

2 c
flour
1 tsp
salt
1 tsp
baking powder
1 tsp
baking soda
1 tsp
cinnamon
3/4 c
shortening
1 c
granulated sugar
1
egg
1 c
canned pumpkin
1 tsp
vanilla extract
1/2 c
chopped walnuts (optional)
1/2 c
raisins (optional)

FROSTING INGREDIENTS

3 Tbsp
melted margarine or butter
1/2 c
brown sugar, firmly packed
6 Tbsp
milk
1 lb
powdered sugar

How to Make Pumpkin Cookies

Step-by-Step

  • 1Heat oven to 375 degrees. Sift together flour, salt, baking powder, baking soda, cinnamon. Set aside.
  • 2Cream shortening and add granulated sugar, and cream.
  • 3Add egg and pumpkin to the shortening and sugar and mix well. Add walnuts and raisins if desired.
  • 4Add flour mixture and mix well.
  • 5Drop by teaspoonfuls unto greased cookie sheets. DO NOT USE AIR BAKE PANS. Bake 10 to 12 minutes, until done. Cool on cooling racks.
  • 6When cookies are cooled mix together margarine, brown sugar, and milk, add powdered sugar to make a thin easy to spread frosting. Frost cookies. Store in air tight container in cool spot.
