Ingredients
- - 1 cup shortening
- - 1 cup sugar
- - 1 3/4 cups flour
- - 1 tsp. baking powder
- - 1 tsp. baking soda
- - 1 tsp. cinnamon
- - 1 tsp. allspice
- - 1 egg
- - 1/2 tsp. salt
- - 1 cup pumpkin
- - 1/2 cup chopped nuts, optional
- - 1 tsp. vanilla extract
- BROWN SUGAR FROSTING:
- - 1 cup packed brown sugar
- - 3 tbsp. margarine
- - 1/4 cup milk
- - 1 cup powdered sugar
- - 1 tsp. vanilla extract
How To Make pumpkin cookies

Step 1Cream shortening and sugar in mixing bowl until light and fluffy. Add flour, baking powder, baking soda, cinnamon, allspice and salt; mix until smooth. Mix in the egg, pumpkin, nuts and vanilla. Drop by small spoonfuls onto a lightly greased cookie sheet. Bake at 350 for 8 to 10 minutes or until golden brown. Bring brown sugar, margarine and milk just to a boil in pan, stirring to mix well. Cool for 1 hour or longer. Stir in the powdered sugar and vanilla. Spread over the cookies and let stand for 1 to 2 hours or until the frosting is set. Makes 2 dozen. Big Taste of Little Rock
