Fall is in the air and the pumpkins are out in full force...this is a frosted cookie my mom used make when I was a teenager, so it has been around for a LONNNGGGG time..lol. I added raisins and finely chopped walnuts to her recipe.

Ingredients

  • COOKIES
  • 1 cup sugar
  • 2 cups flour
  • 1 cup shortening
  • 1 teaspoon baking powder
  • 1 large egg
  • 1 teaspoon baking soda
  • 1 cup pumpkin, canned or cooked
  • 1 teaspoon cinnamon
  • 1 teaspoon vanilla
  • 1/2 teaspoon salt
  • 1/2 cup each...raisins and finely chopped walnuts
  • FROSTING
  • 2 tablespoons margarine
  • 3 tablespoons brown sugar
  • 3 tablespoons milk
  • 1 1/4 cups powdered sugar, more may be needed
  • 1 teaspoon vanilla

How To Make pumpkin cookies

  • Step 1
    Cream together sugar, shortening, egg, pumpkin , and vanilla. Combine the flour, baking powder, baking soda, cinnamon, and salt. add to the creamed mixture and mix well. Stir in the raisins and walnuts.
  • Step 2
    Drop by teaspoonfuls onto a cookie sheet and bake at 350 degrees for ten to twelve minutes. Cool completely on a wire rack.
  • Step 3
    Combine the margarine, milk, and brown sugar in a saucepan and cook until sugar dissolves. Remove from heat and gradually add the powdered sugar. Beat until creamy, Adding more powdered sugar if it is too thin. Add vanilla and spread on cooled cookies.
