pumpkin chocolate chip cookies
A friend of mine used to bring these soft, delicious cookies to work occasionally! It took about 12 years to finally get the recipe! I usually add extra chocolate chips and walnuts to suit my taste. I hope you enjoy them as much as I do!

Makes about 70 cookies
Ingredients
- 3/4 cup cooking oil
- 2 large eggs
- 1/1/2 cup pumpkin, canned or cooked
- 1 teaspoon vanilla extract
- 3/3/4 cup all purpose flour
- 2 cups sugar
- 1/1/2 teaspoon baking powder
- 1/1/2 teaspoon baking soda
- 3/4 teaspoon salt
- 1/1/2 teaspoon cinnamon
- 1/1/2 teaspoon nutmeg
- 3/4 cup chopped walnuts
- 6 ounces dark chocolate chips
How To Make pumpkin chocolate chip cookies

Step 1Preheat oven to 375 degrees.

Step 2Mix oil, eggs, pumpkin and vanilla in large bowl.

Step 3Mix all dry ingredients except nuts and chocolate chips in a separate bowl.

Step 4Slowly mix dry ingredients into wet ingredients mixing well. Fold in nuts and chocolate chips'

Step 5Spoon tablespoon sized dough onto cookie sheet covered with parchment paper. Cook for 13 to 15 minutes until cookies are lightly browned. Cool in pan 5 Minutes and remove to cooling racks.
