  • 2 c
    all purpose flour
  • 1 1/2 tsp
    baking powder
  • 1 tsp
    baking soda
  • 1 tsp
  • 2
  • 1 c
    brown sugar
  • 1 c
    pumpkin puree
  • 1 tsp
    vanilla extract
  • 1/2 c
    canola oil
  • 1 c
    butterscotch chips

How to Make Pumpkin Butterscotch Cookies


  1. preheat oven to 325.
  2. line 2 baking sheets with parchment paper and butter the parchment.
  3. in a mixing bowl whisk together flour, baking powder, baking soda, salt and cinnamon.
  4. in the bowl of a stand mixer combine eggs and sugar.
  5. add pumpkin, vanilla and oil. slowly add the dry ingredients until just combined, then fold in the butterscotch chips.
  6. dollop batter by the 1/4 cup onto cookie sheets. smooth and bake 16 minutes.
  7. cool cookies on the baking sheets for 5 minutes then transfer to racks to cool completely.
