these are great cookies for this time of the year up to the holidays but around here we have them anytime

Ingredients

2 c
all purpose flour
1 1/2 tsp
baking powder
1 tsp
baking soda
1 tsp
cinnamon
2
eggs
1 c
brown sugar
1 c
pumpkin puree
1 tsp
vanilla extract
1/2 c
canola oil
1 c
butterscotch chips

Step-By-Step

1preheat oven to 325.
2line 2 baking sheets with parchment paper and butter the parchment.
3in a mixing bowl whisk together flour, baking powder, baking soda, salt and cinnamon.
4in the bowl of a stand mixer combine eggs and sugar.
5add pumpkin, vanilla and oil. slowly add the dry ingredients until just combined, then fold in the butterscotch chips.
6dollop batter by the 1/4 cup onto cookie sheets. smooth and bake 16 minutes.
7cool cookies on the baking sheets for 5 minutes then transfer to racks to cool completely.
