Ingredients
- 2 cups all purpose flour
- 1 1/2 teaspoons baking powder
- 1 teaspoon baking soda
- 1 teaspoon cinnamon
- 2 - eggs
- 1 cup brown sugar
- 1 cup pumpkin puree
- 1 teaspoon vanilla extract
- 1/2 cup canola oil
- 1 cup butterscotch chips
How To Make pumpkin butterscotch cookies

Step 1preheat oven to 325.

Step 2line 2 baking sheets with parchment paper and butter the parchment.

Step 3in a mixing bowl whisk together flour, baking powder, baking soda, salt and cinnamon.

Step 4in the bowl of a stand mixer combine eggs and sugar.

Step 5add pumpkin, vanilla and oil. slowly add the dry ingredients until just combined, then fold in the butterscotch chips.

Step 6dollop batter by the 1/4 cup onto cookie sheets. smooth and bake 16 minutes.

Step 7cool cookies on the baking sheets for 5 minutes then transfer to racks to cool completely.
