This year it was my 1st time I saved my son's pumpkin instead of giving it away so I cooked the pumpkin & puree it.Now I thought what should I do with it. I started searching recipes online I didnt want pupkin pie or pumpkin bread I wanted something different & I came across this recipe it sounded so good.Im glad I found this recipe it is to die for.Hope you enjoy it too.

Ingredients

  • 2 3/4 cups all purpose flour
  • 3/4 cup sugar
  • 1/2 cup brown sugar
  • 1 1/2 teaspoons baking powder
  • 1 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon ginger
  • 1/4 teaspoon cloves
  • 2 - eggs
  • 1/2 cup pumpkin puree ( i use fresh)
  • 2 teaspoons vanilla extract

How To Make pumpkin biscotti

  • Step 1
    Heat oven to 350. Stir together 2 & 1/2 cup flour,salt,sugar,& baking powder & spices,combine well.
  • Step 2
    In a measuring cup, break the eggs & mix with the pumpkin & vanilla.Combine egg mixture with the flour mixture.Mixture will be thick & a little hard to work with add more flour if needed.(I wet my hands to work the dough much easier.)
  • Step 3
    Divide dough into 2 portions.Take one portion & mold into a cylinder or log about 8 to 10 inches long,adding flour if needed.Place on a parcment lined cookie sheet with the other log.(pam the parchment paper for it not to stick)
  • Step 4
    Bake for 28 minutes,Remove from oven & let it cool for 15 minutes,Remove the loaf to a cutting board & slice into 3/4 thick slices on a diagonal.
  • Step 5
    Place cut slices on the same cookie sheet with parchment paper.Return to oven for 8 minutes turn pieces over for an additional 8 minutes.Remove from the oven & let cool.
