Ingredients
- 1 cup sugar
- 3 cups all purpose flour
- 1 tablespoon baking powder
- 1/2 cup margarine
- 1/2 cup shortning
- 1/4 teaspoon salt
- 2 - eggs (seperate)
- 1 can pumpkin (15 oz)
- 1/2 cup brown sugar, firmly packed
- 1/4 teaspoon clove, ground
- 1/4 teaspoon ginger powder
- 1/4 teaspoon nutmeg
- 1 teaspoon cinnamon
- 1 teaspoon vanilla extract
- 1 cup sweetened coconut
How To Make pumpkin bars

Step 1Mix together flour, shorting, baking powder, margarine, salt, white sugar and ONE egg. Mixture will be crumbly.

Step 2Grease (shorting) a cookie baking sheet. Press half the dough until 1/4 inch thick.

Step 3In a separate bowl, mix pumpkin, brown sugar, the spices, vanilla and ONE egg. Spread on cookie dough on baking sheet.

Step 4Crumble the rest of the dough loosely on top of the pumpkin mixture. Sprinkle the top with the coconut. Bake at 375 for 35 minutes. Stir up the coconut if browning to dark during cooking time.
