CREAM CHEESE FROSTING:
vanilla extract, preferably clear vanilla, not brown
How to Make Pumpkin Bars
1Preheat oven to 350°.
In a mixing bowl, beat together eggs, oil, sugar and pumpkin until light and fluffy. [You can do this by hand, or by using an electric hand mixer].
2In separate bowl, combine all dry ingredients. Add to pumpkin mixture and blend together well.
3Spread batter in an UNGREASED 15 x 10 x 1" jelly roll pan.
4Bake at 350° for approx. 25 minutes, until tester comes out clean. Allow to cool before spreading on the frosting.
5For Cream Cheese Frosting, mix all frosting ingreds. together and beat will with electric hand mixer until fluffy and smooth. Spread on top of Pumpkin Bars. Cut into 40 pieces.
6These freeze well. Enjoy!
