A tried and true recipe from an old friend ...

Ingredients

  • PUMPKIN BARS:
  • 4 - eggs, slightly beaten
  • 1 cup vegetable oil
  • 1 2/3 cups sugar
  • 16 ounces can of pumpkin - not pumpkin pie filling
  • 2 cups flour
  • 2 teaspoons cinnamon
  • 1 teaspoon baking soda
  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • CREAM CHEESE FROSTING:
  • 3 ounces cream cheese
  • 1/2 cup butter, softened
  • 1 teaspoon vanilla extract, preferably clear vanilla, not brown
  • 2 cups powdered sugar

How To Make pumpkin bars

  • Step 1
    Preheat oven to 350°. In a mixing bowl, beat together eggs, oil, sugar and pumpkin until light and fluffy. [You can do this by hand, or by using an electric hand mixer].
  • Step 2
    In separate bowl, combine all dry ingredients. Add to pumpkin mixture and blend together well.
  • Step 3
    Spread batter in an UNGREASED 15 x 10 x 1" jelly roll pan.
  • Step 4
    Bake at 350° for approx. 25 minutes, until tester comes out clean. Allow to cool before spreading on the frosting.
  • Step 5
    For Cream Cheese Frosting, mix all frosting ingreds. together and beat will with electric hand mixer until fluffy and smooth. Spread on top of Pumpkin Bars. Cut into 40 pieces.
  • Step 6
    These freeze well. Enjoy!
