Ingredients

  • PUMPKIN BARS:

  • 4
    eggs, slightly beaten
  • 1 c
    vegetable oil
  • 1 2/3 c
    sugar
  • 16 oz
    can of pumpkin - not pumpkin pie filling
  • 2 c
    flour
  • 2 tsp
    cinnamon
  • 1 tsp
    baking soda
  • 2 tsp
    baking powder
  • 1 tsp
    salt
  • CREAM CHEESE FROSTING:

  • 3 oz
    cream cheese
  • 1/2 c
    butter, softened
  • 1 tsp
    vanilla extract, preferably clear vanilla, not brown
  • 2 c
    powdered sugar

How to Make Pumpkin Bars

Step-by-Step

  1. Preheat oven to 350°.

    In a mixing bowl, beat together eggs, oil, sugar and pumpkin until light and fluffy. [You can do this by hand, or by using an electric hand mixer].
  2. In separate bowl, combine all dry ingredients. Add to pumpkin mixture and blend together well.
  3. Spread batter in an UNGREASED 15 x 10 x 1" jelly roll pan.
  4. Bake at 350° for approx. 25 minutes, until tester comes out clean. Allow to cool before spreading on the frosting.
  5. For Cream Cheese Frosting, mix all frosting ingreds. together and beat will with electric hand mixer until fluffy and smooth. Spread on top of Pumpkin Bars. Cut into 40 pieces.
  6. These freeze well. Enjoy!
