Ingredients

PUMPKIN BARS:

4
eggs, slightly beaten
1 c
vegetable oil
1 2/3 c
sugar
16 oz
can of pumpkin - not pumpkin pie filling
2 c
flour
2 tsp
cinnamon
1 tsp
baking soda
2 tsp
baking powder
1 tsp
salt

CREAM CHEESE FROSTING:

3 oz
cream cheese
1/2 c
butter, softened
1 tsp
vanilla extract, preferably clear vanilla, not brown
2 c
powdered sugar

How to Make Pumpkin Bars

Step-by-Step

  • 1Preheat oven to 350°.

    In a mixing bowl, beat together eggs, oil, sugar and pumpkin until light and fluffy. [You can do this by hand, or by using an electric hand mixer].
  • 2In separate bowl, combine all dry ingredients. Add to pumpkin mixture and blend together well.
  • 3Spread batter in an UNGREASED 15 x 10 x 1" jelly roll pan.
  • 4Bake at 350° for approx. 25 minutes, until tester comes out clean. Allow to cool before spreading on the frosting.
  • 5For Cream Cheese Frosting, mix all frosting ingreds. together and beat will with electric hand mixer until fluffy and smooth. Spread on top of Pumpkin Bars. Cut into 40 pieces.
  • 6These freeze well. Enjoy!
