Ingredients
- PUMPKIN BARS:
- 4 - eggs, slightly beaten
- 1 cup vegetable oil
- 1 2/3 cups sugar
- 16 ounces can of pumpkin - not pumpkin pie filling
- 2 cups flour
- 2 teaspoons cinnamon
- 1 teaspoon baking soda
- 2 teaspoons baking powder
- 1 teaspoon salt
- CREAM CHEESE FROSTING:
- 3 ounces cream cheese
- 1/2 cup butter, softened
- 1 teaspoon vanilla extract, preferably clear vanilla, not brown
- 2 cups powdered sugar
How To Make pumpkin bars

Step 1Preheat oven to 350°. In a mixing bowl, beat together eggs, oil, sugar and pumpkin until light and fluffy. [You can do this by hand, or by using an electric hand mixer].

Step 2In separate bowl, combine all dry ingredients. Add to pumpkin mixture and blend together well.

Step 3Spread batter in an UNGREASED 15 x 10 x 1" jelly roll pan.

Step 4Bake at 350° for approx. 25 minutes, until tester comes out clean. Allow to cool before spreading on the frosting.

Step 5For Cream Cheese Frosting, mix all frosting ingreds. together and beat will with electric hand mixer until fluffy and smooth. Spread on top of Pumpkin Bars. Cut into 40 pieces.

Step 6These freeze well. Enjoy!
