These bar-style cookies recently took first-place in the desserts category in a local recipe contest. Ingredients

  • 1 cup + 3 Tbsp
    all-purpose flour
  • 1 c
    rolled oats (quaker 5-minute oatmeal)
  • 3/4 c
    light brown sugar, firmly packed
  • 1/2 tsp
    baking soda
  • 1/4 tsp
    salt
  • 3/4 c
    butter, melted
  • 1 c
    milk chocolate chips
  • 1/2 c
    pecans, chopped
  • 3/4 c
    mrs. richardson's butterscotch caramel topping

How to Make Prize-winning Oatmeal Carmelitas

Step-by-Step

  1. In large mixing bowl, combine 1 cup of flour, oats, brown sugar, soda, salt and butter. Blend well at low speed to form crumbs. Press half of crumbs into bottom of an 11" x 7" baking pan. Bake at 350 degrees F for 10 minutes.
  2. Remove pan from oven. Sprinkle with chocolate chips and pecans. Blend caramel topping with remaining flour. Pour caramel mixture over chocolate and pecans to cover. Sprinkle with remaining crumb mixture. Bake 15-20 minutes until golden brown. Chill 1-2 hours before serving. Cut into bars.
