preserved banana bars
I still find lots of my time is spent making cookies. You may be shocked to find out how many Cookie Monsters there are. This is a recipe I find I use quite a bit.

Enjoy these banana bars for breakfast, afternoon tea, or any time you want a great-tasting snack. They're sweet, soft, and moist. Sort of a twist on banana bread. with a hint of apricot (from the apricot preserves). They have a slight crunch from pecans. Try them with or without the vanilla frosting... they're good both ways.

Ingredients
- 1/2 cup butter, softened
- 1 cup brown sugar
- 10 ounces apricot preserves
- 2 large eggs, beaten
- 1 teaspoon vanilla extract
- 1 3/4 cups all-purpose flour
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 3 medium bananas, mashed (1 cup)
- 1/2 cup nuts
- OPTIONAL VANILLA FROSTING
- 1/2 cup butter, softened
- 1 1/2 cups powdered sugar
- 3 tablespoons heavy cream
- 1 teaspoon vanilla extract
How To Make preserved banana bars

Step 1Preheat oven to 350 degrees F. Cream together butter and brown sugar.

Step 2Add preserves, beaten eggs, and vanilla extract.

Step 3Combine the flour, baking powder, baking soda, and salt in a separate bowl.

Step 4Add to the creamed mixture.

Step 5Add the mashed bananas and stir well.

Step 6Then add the nuts and stir well.

Step 7Pour into a greased and floured 13”x9” pan.

Step 8Bake at 350 degrees F for 35-40 minutes.

Step 9Cool the bars.

Step 10For the frosting combine softened butter, powdered sugar, heavy cream, and vanilla extract. After the bars have cooled, frost the bars.

Step 11Cut into bars and enjoy.
