Ingredients
- 1/2 cup butter, softened
- 1 large egg
- 1 cup granulated sugar
- 1 package (.5 oz.) instant potato flakes
- 1 package (2 oz.) buttermilk biscuit mix
- 1 teaspoon vanilla extract (or coconut extract)
- 1 cup pecans, chopped
How To Make potato cookies

Step 1Preheat oven to 350 degrees. Line cookie sheets with parchment paper and set aside. Cream butter, sugar and egg together until creamy. Slowly add potato flakes and biscuit mix until combined well. Add extract of choice. Stir in chopped pecans.

Step 2Drop by teaspoonfuls on prepared cookie sheets. Bake 8-10 minutes until light brown on bottoms. Remove to wire racks to cool completely. Yield: 5 dozen **This recipe is very easy to double if you have a crowd to feed yummy cookies to! :-)
