I have no idea why these are called Potato Cookies other then they resemble tiny potatoes after they sit for a while. I refrigerated mine and they got firmer. One of the therapist who works with my husband gave him this recipe because he loves sweet cookies.

Ingredients For potato cookies

4 oz1/2 stick of softened unsalted butter

4 oz(1/2 pkg) softened cream cheese

2 cpowder sugar

1 tspvanilla extract

2 ccoconut, flaked

1/2 cpowdered sugar & cinnamon (set aside)
How To Make potato cookies

1Cream butter and cream cheese.

2Add powdered sugar slowly, add vanilla, mix till it reaches a clay like consistency.

3Add coconut, mix well. Roll into small, potato shaped cookies. Roll in mixture of powdered sugar and cinnamon. Cookies will look like tiny white potatoes. Let set for about 10 minutes and enjoy.
