potato chip cookies

One of my childhood favorites. Ice them for an even greater treat! Found this recipe on Southern Plate. It is exactly like the ones I had growing up. Only difference is we iced them. Make sure you make some simple white icing. It makes all the difference. If you love shortbread cookies, you'll love these.

Ingredients

  • 2 1/2 ounces sliced almonds
  • 1 cup butter, softened
  • 1 cup sugar
  • 2 teaspoons vanilla
  • 1 cup crushed potato chips
  • 3 1/2 cups all purpose flour

How To Make potato chip cookies

  • Step 1
    Grease cookie sheet(s).
  • Step 2
    Cream together butter and sugar, then vanilla.
  • Step 3
    Alternate adding in chips and flour.
  • Step 4
    Add almonds last.
  • Step 5
    The dough will have a dry consistency so you may have to squish it together some with your hands to form the cookies.
  • Step 6
    Bake in 350 degree oven for 15-20 minutes.

    ****Make a basic powder sugar icing and drizzle over cooled cookies if desired. That is how I always ate them. That or frosted****
