This recipe came from my Grandma Jeanette Lillie. They fascinated me when I was a kid because they had potato chips in them which makes them unique. I love the salty sweet taste of these cookies.

Ingredients

  • 1 cup shortening
  • 1 cup sugar
  • 1 cup brown sugar
  • 2 large eggs
  • 2 teaspoons vanilla
  • 1 teaspoon baking soda
  • 2 cups flour
  • 1 cup peanuts, salted and without skins, (you can chop them smaller if you like)
  • 1 cup crushed potato chips (the thin sliced potato chip works best, no ridges)

How To Make potato chip cookies

  • Step 1
    1. Cream together until smooth the shortening, sugar, brown sugar, and eggs.
  • Step 2
    2. Add vanilla and soda, mix well. Add the flour, chips, and peanuts. Mix well.
  • Step 3
    3. Drop by spoonfuls onto a greased cookie sheet and back in a 350* oven for about 12 minutes. This cookie is supposed to be crispy and crunchy, so don't under bake them.
