potato chip cookies
Linda, one of my friends in Pensacola, gave me this recipe in the 70s. Her husband, Jim, worked in our OTASCO store, and almost every day during the Christmas rush season, Linda would bring a fresh batch to the store for customers and employees to munch on while shopping or working. These have been a favorite of my family ever since those days!

Ingredients
- 1 cup solid crisco
- 1 cup brown sugar, firmly packed
- 1 cup granulated sugar
- 2 - eggs
- 2 cups self-rising flour
- 1 teaspoon vanilla extract
- 1 cup crushed potato chips
- 1 cup chopped nuts (i use pecans, but walnuts would probably be good, too.)
How To Make potato chip cookies

Step 1Beat together Crisco, sugars, and eggs until creamy.

Step 2Add remaining ingredients and mix well.

Step 3Drop by small spoonfuls onto ungreased cookie sheet. Flatten with fork that has been dipped in hot water.

Step 4Bake at 350 for 10 to 15 minutes.
