potato chip cookies

This recipe was given to me at a class reunion meeting years ago. These cookies are always gobbled up; the recipe is requested often. My husband asks for these more than peanut butter cookies--amazing! Super easy to make, yay!

Ingredients

  • 1 cup butter, no substitute
  • 1/2 cup sugar
  • 1 teaspoon vanilla
  • 1/2 cup crushed plain potato chips, crushed fine
  • 1/2 cup chopped nuts (pecans or walnuts0
  • 2 cups all purpose flour

How To Make potato chip cookies

  • Step 1
    Cream butter on high speed, add sugar and vanilla, mix well on high. Add crushed potato chips and nuts. I mix this by hand, or low speed with mixer.
  • Step 2
    Form dough into small balls (appr. 1 1/2"). Sometimes, I use 2 teaspoons and just drop onto cookie sheet (impatient!).
  • Step 3
    Place on ungreased cookie sheet. Press with sugared on the bottom glass; make it about 1/2 thick. BAKE @ 350o for 15 minutes. The sugar adds a little extra crunch. We like a little brown around edges, but however you like works fine. These do freeze well, if there are any left. I always make 2-3 recipes at a time, YUM!
