I had cookies similar to these a few times as a child and really liked them. When I decided to try these for my kids, both of my sons loved them. They are certainly not a health food but they are a unique combination of ingredients and are quite tasty!

Ingredients

  • 3/4 cup butter, unsalted, softened
  • 1 cup light brown sugar, packed
  • 1 cup sugar
  • 2 - eggs (i use large)
  • 1 teaspoon real vanilla extract
  • 2 cups flour, all-purpose (i use unbleached)
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 2 cups crushed potato chips (i use ruffles)
  • 1 cup semi-sweet chocolate chips (i prefer the mini chips)
  • 1/3 cup pecans, chopped (optional)

How To Make potato chip chocolate chip cookies

  • Step 1
Preheat oven to 350 degrees F.
  • Step 2
Sift together flour, baking soda, and salt.
  • Step 3
Cream butter, brown sugar, and sugar together until fluffy. Add eggs and vanilla and mix just until well blended. Add flour mixture and blend well. Fold in chocolate chips and potato chips.
  • Step 4
Drop onto ungreased cookie sheets (I use a scoop that holds just over 1 tablespoon of dough.) Bake for 15 min. or until they just begin to turn golden brown.
  • Step 5
Let cool on cookie sheet for 1-2 min. Remove to wire cooling racks until cool.
  • Step 6
They are best when they have cooled completely. Enjoy!
