pistachio kisses
I wanted to try a Pistachio cookie forever. They are one of my favorite nuts and I mean, chocolate, who can resist. This cookie isn't overly sweet so you can play with the Kisses a little. I used the large Hazelnut Kisses (which made these cookies mondo), but the reality was the hazelnut was lost in the pistachio. I am going to try them with a Dark Chocolate Kiss as I like the slightly sweet aspect of the cookie.

Ingredients
- 1 cup butter, softened
- 2/3 cup powdered sugar
- 1 - egg
- 1 teaspoon vanilla extract
- 3/4 teaspoon almond extract
- 1 (3.4 oz) - box instant pistachio pudding mix
- 2 cups all-purpose flour
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 cup mini chocolate chips
- 1 1/2 - 2 cups pistachios, shelled and salted, finely chopped
- 1 - bag hershey kisses (i prefer dark)
How To Make pistachio kisses

Step 1In a large mixing bowl cream butter and powdered sugar until smooth. Beat in egg, vanilla, and almond extract.

Step 2In a separate bowl combine pudding mix, flour, baking powder, and soda, add the chocolate chips and 1/2 C. chopped pistachios.

Step 3Slowly add the dry ingredients to the butter-sugar mixture, gently combining. Roll into 1" balls, then roll in pistachios. Place on lined or lightly greased cookie sheets.

Step 4Bake at 350° for 10-12 minutes. Immediately press a Hershey kiss in the middle of each cookie. Remove cookies to cooling racks. Cool completely.
